摘要: 茶叶中所富含的儿茶素类物质,在体外细胞试验及动物体内试验中,表现出种种生物活性,但由于其“多羟基”的化学结构限制了应用范围。本文首先简要概括了应用于儿茶素分子修饰的常用方法,随后分别对修饰后儿茶素在食品、药品、日化领域中的应用实例进行归纳总结。

Abstract: Catechins, which are rich in tea leaves, were found efficient bioactivity in vitro cell cultures and in vivo animal models. Unfortunately, their “ployhydroxy” chemical structures limit the further application. In this paper, some common methods used for molecular modification of catechins were reviewed firstly, and then some practical instances of modified products applied in food, drug and daily cosmetics area were reviewed.
