摘要: 茶叶中所富含的儿茶素类物质,在体外细胞试验及动物体内试验中,表现出种种生物活性,但由于其“多羟基”的化学结构限制了应用范围。本文首先简要概括了应用于儿茶素分子修饰的常用方法,随后分别对修饰后儿茶素在食品、药品、日化领域中的应用实例进行归纳总结。
